It’s all about getting creative.

Pasta dishes

A family favourite such as lasagne doesn’t have to be made with, well… lasagne sheets! You can substitute these for strips of courgette, and make tasty meat and cheese sauces to layer between these. Simply slice a courgette lengthways using a vegetable peeler, and set to one side (there’s no need to pre-cook them, either).

By omitting the pasta, you’re left with a dish that provides a good balance of protein and fat, which have a minimal impact on blood glucose levels.

You could also use aubergine; this, along with minced lamb, is key ingredient of moussaka – a traditional Moroccan dish that also features minced lamb. It’s naturally low-carb, and thus, makes a perfect choice for dinner.

Instead of spaghetti or tagliatelle, enjoy your meatballs, bolognese or carbonara with ‘noodles’ made from courgette or butternut squash. You can use a vegetable peeler to achieve ribbon-like strips, or invest in a gadget known as a spiraliser, to transform your veggies into vibrant ‘courgetti’ or ‘boodles’ as they are more affectionately known.

Potato and rice dishes

When making a shepherd’s or cottage pie, top the base of minced beef or lamb with mashed, swede, carrots or turnip (instead of regular potato), for a low-carb twist on this comforting classic.

Similar to the above, the British favourite can be adapted by swapping roast potatoes for lower carb root veggies like parsnips, squash, swede or turnip.

Cauliflower is a superbly versatile vegetable that can be prepared in a number of ways. It doesn’t have to be bland; try lightly steaming and mashing it with butter and/or cream. This is a great low-carb option in place of mashed potato.

As a great replacement to rice, you can add raw cauliflower or broccoli florets to a blender (or simply grate them), lightly blitzing them until a grain-like texture is produced. These can be steamed or stir fried with butter, coconut or other oil of your choice. A great accompaniment to curries, stir fries and other dishes.

When it comes to planning your dinner, there’s plenty of scope – you just need a little bit of imagination!
