Low Carb Christmas Pudding (v)

What’s Christmas dinner without Christmas pudding? Whilst the traditional Christmas pudding is typically high in carbs, this low carb version has only 8g of carbs per serving. Plus, it’s super speedy and will fill your kitchen with a warming festive feel, just in time for the most wonderful time of the year. 

Low Carb Christmas Pudding (v)

Prep time 5 minutes

Cook time 6 minutes

Serves 6

Ingredients

100g Ground Almonds

1 tsp. Baking Powder

1 tsp. Cocoa Powder

2 tbsp. Stevia

2 tbsp. Mixed Spice

2 tbsp. Cinnamon

10g Walnuts, roughly chopped

100g Carrot, grated

1 Orange, zested

2 tbsp. Butter, melted

1 Egg, beaten

1 tbsp. Double Cream

25ml Brandy

50g Frozen Blueberries

50g Frozen Cherries

 

To serve:

100ml Double Cream

Preparation Method

1. In a bowl mix together the dry ingredients, then add the melted butter and all of the remaining ingredients and stir until combined.

2. Grease a microwavable bowl and add the Christmas pudding mixture.

3. Microwave for 6 minutes and then turn out onto a plate.

4. Serve with double cream and enjoy!
