Low Carb Turkey Curry

Low Carb Turkey Curry

Prep time 10 minutes

Cook time 20-25 minutes

Serves 4


2 tbsp. Butter

1 Medium Onion, sliced

1 tsp. Chilli Flakes

1 tsp. Ground Coriander

1 tsp. Ground Cumin

2 tsp. Paprika

1 tbsp. Garam Masala

3 Garlic Cloves, minced

1 tsp. Fresh Ginger, grated

500g Leftover Roast Turkey, chopped

1 tbsp. Tomato Puree

200g Coconut Cream

Salt and Pepper, to taste


For the cauliflower rice:

2 tbsp. Olive Oil

1 Medium Head of Cauliflower, grated

1 tsp. Turmeric

Salt and Pepper, to taste

To serve:

4 tbsp. Greek Yoghurt

4 tbsp. Fresh Coriander, chopped


Preparation Method

  1. Heat the butter in a medium sized frying pan and then add the onion and fry for a few minutes until soft.
  2. Next, stir in the chilli flakes, spices and the garlic and fry for a further minute.
  3. Add the leftover turkey, tomato puree and coconut cream and season with the salt and pepper.
  4. Reduce the heat and leave to simmer for around 10 minutes.
  5. Meanwhile, prepare the cauliflower rice by heating the olive oil in a frying pan and then adding the cauliflower, turmeric and seasoning with the salt and pepper.
  6. Fry until golden brown and serve alongside the curry with a spoonful of Greek yoghurt and garnished with the fresh coriander.
