3 meals you can make for £1 and under

Looking for some budget-friendly meal inspiration? Living a low carb lifestyle doesn’t mean having to buy expensive ingredients. Try these meals which can all be made for £1 or under per serving. To calculate the costs, we’ve used an average of popular supermarket prices, but you may even find the ingredients cheaper elsewhere.

Bolognese Stuffed Courgette Boats

Cook time 30 minutes

Serves 4

Ingredients

4 Medium Courgettes

½ Medium Onion

2 Garlic Cloves

120g Cheddar Cheese

2 tbsp. Olive Oil

500g Beef Mince

1 x 400g Tin Chopped Tomatoes

1 tsp. Dried Oregano

1 Beef Stock Cube

Salt and Pepper, to taste

 

Preparation Method

  1. Preheat the oven to 200°C/180°C fan (390°F/350°F fan) and line a baking tray with baking foil.
  2. Slice the courgettes in half and scoop out the pulp. Leave the pulp aside and place the courgette halves on the baking tray.
  3. Prepare the ingredients for the bolognese by chopping the onion, mincing the garlic and grating the cheese.
  4. Heat the oil in a pan and add the onion, cook for a few minutes and then add the garlic. Fry for 1 minute and then add the mince.
  5. Use a spatula to break up any large pieces of mince and fry until brown. Add the chopped tomatoes, courgette pulp and oregano. Crumble in the stock cube.
  6. Season with the salt and pepper and stir until well incorporated. Leave to simmer for 8-10 minutes.
  7. Spoon the mixture into the courgette boats and then top with the cheese.
  8. Bake for 15-20 minutes or until the cheese has melted.

Easy Cheesy Tomato Soup (v)

Prep time 10 minutes

Cook time 20 minutes

Serves 4

Ingredients

1 Medium Onion

2 Garlic Cloves

220g Cheddar Cheese

3 tbsp. Olive Oil

2 Vegetable Stock Cubes

450ml Boiling Water

2 x 400g Tins Chopped Tomatoes

120ml Double Cream

Salt and Pepper, to taste

Handful of Fresh Basil (optional)

 

Preparation Method

  1. Begin by chopping the onion, mincing the garlic and grating the cheese. Set aside.
  2. Heat the oil in a large pot over a medium heat and then add the onion and garlic, fry for a few minutes until soft.
  3. Add the stock cubes to the boiling water and then pour into the pot along with the tinned tomatoes and cream. Bring to the boil.
  4. Reduce the heat then add the grated cheese and stir until melted. Next, transfer to either a blender or use a handheld blender to blend until smooth.
  5. Season with the salt and pepper and then serve, topped with the optional fresh basil.

Chickpea Greek Salad (v)

Prep time 10-15 minutes

Cook time 5-10 minutes

Serves 4

Ingredients

1 tbsp. Olive Oil

1 x 400g Tin Chickpeas (drained weight 230g)

1 Medium Cucumber

1 Medium Red Onion

200g Cherry Tomatoes

100g Black Olives

200g Feta

100ml Olive Oil

1 tsp. Dried Oregano

2 tbsp. Lemon Juice

Salt and Pepper, to taste

 

Preparation Method

  1. Heat 1 tbsp. olive oil in a frying pan. Drain the tin of chickpeas and then add the chickpeas to the pan. Season with salt and pepper and fry for 5-10 minutes.
  2. In the meantime, prepare the remaining ingredients for the salad. Dice the cucumber then chop the red onion and slice the cherry tomatoes and olives.
  3. Add to a large bowl along with the cooked chickpeas and then crumble on the feta cheese.
  4. To prepare the dressing, add the remaining olive oil, oregano and lemon juice into a separate bowl and season with the salt and pepper. Mix well until incorporated.
  5. Pour the dressing onto the salad and then stir until well coated. Divide between four plates then serve.
